When in doubt, make Vegetarian Mapo Tofu.

I've never met a mapo tofu I didn't like and this vegetarian version is very tasty. I will definitely make it again! I didn't feel the need for any other veggies as others have suggested. This recipe needs an edit - in the ingredient list it says 'chives' when in the recipe itself it says 'scallions.' Two very different flavors.Made a half-recipe today. Used a couple varieties of fresh mushrooms, and an asian chili paste.

Perfect spice! Paired with a quick cucumber kimchi it was the best meal we've had all week. Luckily there are leftovers for lunch tomorrow! All in all, I loved it, but I made some additions/changes. I could not find the bean paste, so I substituted 1 T. black bean paste and 1 T siracha which I know is not the same thing, but it tasted great. I also added julienned yellow pepper and carrot, some asparagus spears, and sliced water chestnuts when I was stir frying the aromatics.

Vegetarian Mushroom Thyme Gravy Recipe on Food52Vegetarian Mushroom Thyme Gravy Recipe on Food52As much as I love everything about cooking Thanksgiving dinner I stress about one thing....the gravy! A vegetarian friend came to the rescue offering up her vegetarian gravy. Through the years it has been tinkered with and has become my 'go to' recipe any time I need the perfect gravy for both vegetarians and carnivores. It can be used on mashed potatoes, vegetables, stuffing and even turkey! You can use any type of dried mushroom. I have used shitake mushrooms but mixed dried mushrooms will provide more interesting flavors. To make a vegan version substitute olive oil for the butter and additional broth for the cream. - sticksnscones

Chickpea, Spinach, and Chorizo Frittata Recipe on Food52Chickpea, Spinach, and Chorizo Frittata Recipe on Food52Dense, fresh and robustly spiced, this is one of my favourite fritattas. The nutty bite of chickpeas rolled around in the orange oil oozing from the chorizo give the dish a substantial feel, making it good for a full meal not a just side dish. I've made it with spinach, chard and cavalo nero, play around with the flavours, it is very forgiving.

Butternut Squash and Roasted Garlic Galette Recipe on Food52Butternut Squash and Roasted Garlic Galette Recipe on Food52I love butternut squash in any form, but it takes a lot of work to cut so I don't cook with it nearly enough. When I do, it has to be a special recipe. This one is worth it. I've served this as an appetizer and as a main course. It could travel well for holiday potlucks. - lorinarlock

Judy Hesser’s Oven-Fried Chicken Recipe on Food52Judy Hesser’s Oven-Fried Chicken Recipe on Food52This smart recipe comes from our co-founder Amanda Hesser's mother Judy, and will give you the best fried chicken you can make without committing yourself to quarts of hot oil (this recipe only calls for 2 tablespoons of butter). Best of all, the process is simple and mostly hands off. As Amanda writes, 'I sometimes add grated Parmigiano-Reggiano cheese and grated lemon zest to the flour mixture. The cheese underlines the nutty flavor you get from frying and the zest brightens the dish. It is delicious without these, too. My family likes it at any temperature and at any time of day, even cold out of the fridge for breakfast.' Adapted slightly from Cooking for Mr Latte (W. W. Norton & Company, 2003).
