Does anyone know the caloric breakdown?It's starting to get cold so I've been craving some new soup recipes. Just made this last night and it is AMAZING! I used red lentils instead of french green lentils, and I used Andouille-style chicken sausage and was very happy with the result.
I also used regular green lentils rather than french green , since this is what I had on hand, and was perfectly happy with the result. thanks for this recipe! It will make return appearances in my home.Great base - I used almost twice as much kale, ground turkey that I seasoned lightly, and dried herbs. Delicious and filling with infinite room to adapt.Lentils don't have to be soaked, if they were crunchy the soup should have been simmered longer.

The Best Roast Chicken with Garlic and Herb Pan Sauce Recipe on Food52I may have mentioned once or twice that my daughter likes chicken. Okay, it goes beyond like–it's more of a deep-seated obsession. (She asks for it at pretty much every meal.) Clara particularly enjoys eating it off the bone, cave-baby style. It's become quite the challenge to see how many different ways I can prepare chicken, but once a week I roast a bird for the whole family–we get several meals out of it, and because we're devoted parents, we let Clara have both drumsticks. Sometimes it feels like there are as many roast chicken recipes out there as there are snowflakes; and no matter how great your favorite is, it's nice to switch it up every now and then. I tend to fiercely embrace a particular technique, then get bored after about six months and move onto the next. It's a little like serial dating. Thanks to Kim Foster's side-splittingly funny new book, Sharp Knives, Boiling Oil: My Year of Dangerous Cooking with Four-Year-Olds, I've discovered a method that just may convince me to settle down. Aside from the technique itself, which is simple and great, I love Kim's intro to the recipe: she describes her family's weekly roast chicken ritual, which involves hacking up the cooked bird and serving it 'in brutally unkempt bites and chunks on a big board,' then encouraging everyone use their fingers to dredge the chicken chunks in a delicious pan sauce before devouring them. In her words, 'it's a joyful, crispy, hot mess.' 'I want a family chicken ritual like that!' I thought when I read it. Kim's roasting technique is inspired by Thomas Keller's roast chicken (blistering heat, lots of olive oil and salt, and that's pretty much it) and yields an incredibly juicy, tender bird with impossibly crisp skin. But her garlic and herb pan sauce is what really makes this recipe for me. Even if you're convinced your way of making roast chicken is the only way, I strongly urge you to try Kim's. You won't regret it.

Pretty Pickled Onions Recipe on Food52Looking for a new condiment for summer time burgers, I started experimenting with fun pickling ideas, and these pickled onions have become a family favorite ever since. We use them on everything! They work with countless dishes. Pickled onions can be a nice addition to tacos, simple eggs, or, add a bright zing to salads and sandwiches. Their tangy goodness offers a balanced compliment to anything rich or sweet as well (i.e. roasted butternut squash or a creamy soup). Besides, it takes about 10 minutes to make and the beautiful crimson jewel-toned color is gorgeous! Full instructions are below, but you basically slice onions and submerge in a bath of vinegar, water, sugar and salt. After some experimentation, I've come up with a balanced ratio of these elements. You don't want the end result to be too sour, sweet or salty. This is a quick pickle recipe so it comes together 'quickly.' Within about 20-30 minutes it starts tasting pretty darn good. You can add aromatics like garlic, thyme and peppercorns if you like, but this simple 4 ingredient version will just as great without the extras.

Scrambled Egg Muffins Recipe on Food52In my quest to simplify, I have been considering an all inclusive breakfast muffin. I used to make a version that involved layering meat, veggies, and cheese in muffin tins, drizzling with beaten egg, and baking. They were decent but seemed a bit spongy and did not freeze well. I also had fond memories of a quiche-like muffin from Specialty's bakery in SF that seemed to have cornmeal or something more substantial to hold it all together. In my searches for something similar, I came across a recipe on bhg.com that scrambled some eggs and folded them into a cornbread batter; it seemed like a great starting point. The flavor profile I wanted in these muffins was inspired by a breakfast we made In the midst of summer -- an odd-sounding, but delicious combination of browned sweet corn, eggs, cheese, and maple-caramelized ham. For the first batch, I followed the original recipe pretty closely, adding just the ham, corn, and more cheese, and reducing the sugar. They were really good and it seemed a great method for suspending any combination of meat, veggies, and cheese. For the next batch, I added an extra egg to the scramble and a bit of baking soda to help provide lift, as well as a roasted chile. I ended up with what turned out to be an amazing breakfast muffin. I should add that I also made this in a loaf pan and cut it into slices. It cooked a bit longer and came out great.
