A South African Michelin star chef made us Steri Stumpie pancakes, and they were stunning
It took some work for South Africa’s first Michelin star chef, Jan Hendrik van der Westhuizen, to convince an audience of masterclass attendees that Steri Stumpie's flavoured milk could be turned into an effortless yet mouthwatering pancake.
But Van der Westhuizen simply greased a heated pan with cooking spray, and poured in chocolate-flavoured Steri Stumpie, letting it reduce. That was all the effort it took. The result was a very soft and thin sheet pancake that resembled crepes, and its cocoa flavours was enhanced. It was both light and tore easily, and had a subdued sweetness.
“You can [also] do just plain milk with vanilla essence or extract… if you don’t want to go the Steri Stumpie way, you can make your own flavoured milk and do a nice pancake from that,” he says.
