I don’t know what the simple life is supposed to look like, but at its welcoming most always involves the preparation of soup. Soup is… well… primordial.
Elemental. You throw in what you have: an onion, a few carrots, celery maybe, a ham bone, a chicken carcass, a beef shank. Or, if you’re vegetarian… okay, if you’re vegetarian, your larder is going to be more complicatedly simple. You might be packing miso, mushrooms, dashi, seaweed, tofu, curries, chili flakes, beans, etc. Apples. Some barley, or some rice, or some soup noodles. Soup is goodness itself.
Life, in those moments, starts to colour up. Even becomes extraordinary. Next thing you know you’re on your knees, digging in the back of the bottom cupboard for the soup pot.At Caledonia School in Glace Bay, my Grade 5 teacher was Miss Boutilier. She got married later and I don’t know her name now or if she is still among the living, but Lordy Lordy, that woman loved a good poem. When we got our language books out, our readers, and headed to the poetry section, her eyes lit up.
