Europe's first underwater restaurant is open for business via nparts

Rising from the briny waters of the North Sea, Under looks like a concrete shipping container run aground. But its monolithic exterior belies a unique dining experience — five metres below sea level in southern Norway.

Norwegian architecture firm Snøhetta designed the 34-metre structure, and likens its 40-seat dining room to a “sunken periscope”: Enveloped by a colossal window, the seabed and its abundant aquatic life is the focal point. Under, which holds the double meaning of “below” and “wonder” in Norwegian, will function as a dual-purpose space: Restaurant and marine research centre. Previous Snøhetta projects include Calgary’s Central Library, which opened its doors late last year, and a 2017 kitchen expansion and courtyard renovation at The French Laundry in Yountville, Calif.

An 18-course set menu at Under costs 3,700 crowns including wine pairings; 3,100 crowns with juice pairings. “We believe this is the very best way for us to showcase each season with its unique produce, and where we are located in this little remote corner of the world,” the restaurant states on its website.
