Crispy-edged kale will find its way into everything you want to eat.
There are some things that you cook for your kids, and there are some things that you cook for yourself. On particularly busy nights, I'm focused on getting dinner on the table for my girls as quickly as possible—lest the post-7pm crankies get out of hand—so I reach for easy meal fixings like tortellini, rice and beans, or quesadillas.or dipped into the office snack stash a few too many times, I don't want to eat tortellini or a quesadilla. I just want to dive in to a bowl of greens.
Here's my favorite way to prep an enormous amount of greens as quickly and easily as possible: I buy a huge bag of cut and pre-washed kale from, pour it into my biggest bowl and toss with olive oil, thinly sliced garlic, and salt. I spread the kale out on a few sheet pans and roast it for about 20 minutes, tossing halfway through. The kale wilts down, with some of it getting browned and crispy and some of it staying soft and bright green.
