But as restaurants have broadened their menus, these consumers have many choices when they dine out."It's here for them. It's part of ," Schwaillie said. Galia Atik, 16, became a vegetarian when she was 11 years old."I didn't give up meat because of the taste, but out of moral principle," says Atik, a student in New York City.
And diners can request items that aren't on the menu, like sautéed vegetables with pasta, says Weinzweig.
