Patrons have reminded the couple they have been a part of weddings, anniversaries, graduations, the odd wake and other emotional events. The deal to purchase is not fully inked and future plans for The Bistro will be the new owners’ story. That leaves Vinton and Poulin, who both grew up in Ontario, reflecting on their arrival in New Glasgow and their hopes for the 36-seat restaurant. Both had spent years in the restaurant industry before meeting in Calgary and eventually coming east together to work in Halifax.
They pointed out when they arrived there were fewer food options than today so anyone wanting an evening out was restricted to Heather Hotel, Crofters or driving out to Piper’s Landing.
