Not your typical slow-and-low method.

I didn't want to rate this because I'm not trying it, but the site insists on a rating to post any comment. I'm sure this method suits many--but not me. This is the way my mother and others of her generation made scrambled eggs, and the difficulty I had eating them as a child remains--those strings They made me gag then, and they still do. So I came up with a more wasteful, more time-consuming, more dirty dishes method that works for me.

I beat the eggs in a bowl with a bit of salt, maybe some pepper and a tsp to a Tbsp of cream or half and half if I have it on hand, and then transfer the all-yellow mixture through a mesh strainer into another bowl before scrambling them, slowly and to a creamy consistency, with a bit of butter in a medium to low heat pan. I can now enjoy scrambled eggs without gagging--well worth the effort and the dirty dishes. I do omelets the same way.
