Daniel Curren, owner of Tatamagouche Ice Creamery, will produce butter in the Dartmouth dairy plant he has just acquired. - FileTaking over a production facility 10 times bigger than your current space is a pretty good barometer of confidence in your business.Tatamagouche Ice CreameryHe thinks the location next door to Vessel Meats makes perfect sense, given that customers have already demonstrated a willingness to travel there for high-end products.

“Lyndell did a really remarkable job building out this dairy plant,” he said. “They had to rip up the concrete floors to put in new drainage, repour the floors, make sure they had the proper washable walls, the right HVAC system to maintain positive pressure, it was a big undertaking.” “For me, Tatamagouche will always be our home, that’s where our first scoop shop is. Long-term, we’d love to have our production facility there, but it’s a big capital expense and there’s not many places in the province where you can make dairy, and this space is ready to go,” said Curren, adding that he has no current plan to make cheese himself. “There may be an opportunity for us to do cheese under a private label.

Curren, a self-described “butter geek,” says his products will be cultured, and 86 per cent butterfat.
