This summer, Mill St Bistro in Stellenbosch unveils its exciting new Wine Deck , offering a fresh and vibrant celebration of South Africa’s wine culture. Located at the corner of Mill and Church streets, the Wine Deck invites guests to relax and savour some of the region’s most innovative wines in a laid-back, welcoming environment. For Welsh-born head chef Phil Carmichael, the Wine Deck represents his love for South Africa and the connections people form over food and drink.

‘The best moments happen when people come together, sharing stories and creating memories,’ says Carmichael, whose philosophy is reflected in every aspect of the Bistro— from the curated wine list to the seasonal small plates and cocktails designed to complement the wines.The Wine Deck focuses on showcasing South Africa’s lesser-known wine gems, highlighting small, family-run vineyards and biodynamic, organic, and minimal-intervention wines. Carmichael emphasises that the Bistro aims to ‘push boundaries’ by featuring adventurous winemakers who produce ‘extraordinary results.’ Guests can enjoy these premium wines by the glass, thanks to the state-of-the-art Coravin system. The food menu is equally impressive, with small, seasonal plates that pair perfectly with the wine list. Standout dishes include Jalapeño and Klein River Gruberg Croquettes, Wood-fired Dalewood Camembert with Pear and Saffron Chutney, and the must-try Farmer Angus Charcuterie Platter with Mill St Pickles and Wood-Fired Flatbread. Not to be overshadowed, the cocktail menu features Mill St Bistro’s signature home-ferments. Highlights include The Stellenbosch Sour, which blends homemade coffee kombucha with Woodford Reserve whiskey, and The Bourbonator, offering a distinctly South African twist with homemade vanilla Rooibos syrup and caramelised apple tincture.
