Doug Stephen started his career in the front of house at fine dining establishments in Vancouver and Toronto, he eventually found a passion for cooking and slid into the kitchen at Merchant’s. That’s where his famous hot chicken was born, first as a special and then as a secret off-menu item for industry insiders, who kept it on the DL. Today it is served to all at his Downlow Chicken Shack.A: Whether I’m cooking for family, friends, or guests, the motivation remains the same.
Take the cast iron out of the oven and carefully butter the pan. Pour the corn bread batter into the cast iron pan. Sprinkle remaining cheddar over the top of the corn bread and place back in the oven. Bake for approximately 35 minutes or until a cake tester comes out clean. Allow to cool for 10-15 minutes.
