Quebec maple syrup industry is the envy of the world but could be put to the test as the effects of global warming take shape in the next century.

"The sugar bushes are well situated, where even if the envelope moves a little, there are pockets that will remain and that will still be favourable," said Sylvain Delagrange, a professor specializing in plant ecophysiology at the University of Quebec Outaouais."We could have tapped these forests today, but we likely can't any longer. Their future potential will be lost due to the displacement of the climatic niche.

When night falls and the mercury drops below zero, the tree freezes. The gas in its fibres contracts, creating a suction that dissolves the sugars in its vessels with water drawn from the soil through the roots. This is the absorption phase. Regardless of the climate model used, be it moderate or extreme, the average temperature in Canada is expected to rise by 3.2 to 6.3 C by 2100.

In the spring, when the maple wakes up from dormancy, the accumulated sugars mix with the water absorbed by the roots to be used for the resumption of growth. This is called maple sap.
