Led by chef Fabian Saldana, Maize shutters one year into its run in the former Carmelo’s Ristorante space
Open just over a year at 14795 Memorial, the restaurant, helmed by former Xochi executive chef Fabian Saldana, announced Tuesday that its last day of service was Dec. 31.in December 2021. Described as “an exploration and preservation of traditional Mexican cuisine,” Maize was a corn-proud endeavor with masa-based appetizers, tamales, tacos made with fresh corn tortillas, and a variety of seafood options as well as dishes representing various regions of Mexico.
“Maize’s closure has been tough for me and my team, but we all see this as an opportunity to continue growing in our craft,” Saldana said in a statement. “I am so grateful for the team and customers at Maize that made the last year a dream come true for me.” According to a press release Saldana’s is pursuing a new venture in Houston that will be announced later.
