How to Rescue Rice That’s Stuck on the Bottom of Your Pot

Here's an invaluable cooking hack that has saved mealtime time and again.

Since I’ve never heard of this trick before—and I’m a food writer!—I wanted to see if it was pure luck or if there was really something behind the hack. So I tapped, lead chef of culinary arts at the Institute of Culinary Education in New York, to see what’s going on here. That, of course, led me down the rabbit hole with more questions. How much oil or butter? What rice-to-liquid ratio? And how long should I actually be cooking the rice for anyway, so I could maybe just set a timer and avoid any chance of overcooking it in the first place? Rich shared her go-to rice cooking method with me, which answeredIn a medium saucepot over medium-low heat, sauté a small diced onion in 1 tablespoon of oil or butter for 5 minutes, until softened.
