Try adding in a vanilla pod, a handful of fresh mint or thyme, other spices such as cloves and cinnamon or a little dark chocolate powder for more indulgent, complex varieties. Once cooled and strained, the syrup can be bottled and will keep in the fridge for a few weeks.
It’s also worth prepping some garnishes in advance: taking a fruit peeler, you can easily – and safely – remove the thin peel from an orange or lemon, which can be shaped into professional looking garnishes, or spiralled around a bar-spoon for a lovely coiled spring look. Keep them in a bowl with a little water in it for maximum freshness beforehand.
It’s also wise to remember that during a party, ice is your best friend. As the saying goes: “You run out of ice, you run out of party.” Here, it’s worth prepping a few things, too. For more professional looking blocks of ice, take a large straight-sided food storage box and fill it with freshly boiled filtered water, which has been left to go cold.
