Dr. Fred Cummings runs Edge of the Lake Vineyard in Valley View, Texas.Somewhere between the hurried meticulousness of a sterile surgical room and an expansive 100-acre pig farm lies an unlikely vintner — Dr. Fred Cummings. Born and raised in the peachy state of Georgia, he now runsDr. Cummings recalls helping his grandmother Ruby in her garden, where she raised her own produce for the family. Years later, he would be guided by an astute sense of intuition and a healthy splash of confidence.
In 2010, the children began to leave the house, and Fred, now an empty nester, began planting grapes on the south end of the property. His intent, he says, was always to start a vineyard, but no one took him seriously. “I took a map, then looked up the latitudinal points for where we’re located, and then ran my finger across until I reached Europe — Spain specifically — so we grow Spanish grapes here. And they grow with great vigor!” he exclaims.
