Place the doughnut on a lined baking tray. Cover with a clean kitchen towel and leave to rise for another hour. Heat oil to 175-180°C in a deep pot. Fry doughnuts for 1-2 minutes each side or until golden brown. Remove carefully and drain on a paper towel.
