. “All of the wines are ready to drink now. They all follow the easy-drinking rules of low tannin, high acidity, and moderate alcohol–body,” James says. “My favorite wines always come from a specific area, if you could draw a circle on a map: eastern and southern France, Germany, Austria, Switzerland, and Northern Italy. The structure here varies but more often than not you’ll find wines that are refreshing, savory, and lean—perfect for everyday drinking.
“The first vineyards were planted here by the Romans and the south of France is actually where rosé was first made in this country in the 6th century BCE. The winemaker, Bruno Laboucarié, has even found old coins dating from the time of Marcus Agrippa, in the vineyards. The winery was built around a thermal spring, named for the local, 12th–century patron saint, Saint Siméon; hence Fontsainte—the saint’s fount.
“In 400 BCE, the celtics selected the Wildbacher variety from local grapes in the region to make into wine. The grape was calledmeaning, ‘rabid pearl.’ Those who drank the wine turned rabid with intoxication,” James says. “My guess is they might have overdone it a bit. The wine later gained the nameschiller
, which means ‘to shine between red and white.’ One of the earliest rosés! According to winemaker Franz Strohmeier, Wildbacher was originally made into a light pink wine because of ‘the late ripeness and the higher acid, making it a better rosé than a red.’ A specialty only of Styria, the style gained hype in the 1990s. Franz’s wine is made in a completely natural style, using only indigenous yeasts for fermentation, resulting in a wine that truly speaks to a sense of place.
