2 cups gooseberries1 cup all-purpose flour2/3 cup buttermilk1/4 cup waterGOOSEBERRY SORBETPut the gooseberries, water and sugar in a medium saucepan set over medium heat and bring to a simmer. Reduce the heat to low and cook for 15 minutes, or until the gooseberries are soft.Article contentLeave the berries to cool for 10 minutes, then transfer to a blender and blend on high for a few minutes, until smooth.Make the sorbet in an ice cream maker following the manufacturer’s directions.
Drizzle each serving with one tablespoon of birch syrup. Garnish with a spoonful of toasted hazelnuts and a calendula and serve immediately.
