Darren Makowichuk/Postmedia“I look at each dish and the traditional ingredients that would go into them back home and then try to find those ingredients here or get as close as possible so the flavour will taste the same,” Clarke says. “I won’t just put green colour in something and call it green curry. We started with the Thai market to make sure we had a traditional taste.

Despite the success of their catering business, that dream of having their own restaurant stuck with Sousa and Clarke. Late last year, they secured an unassuming but welcoming 38-seat space in the surprisingly vibrant enclave of restaurants around the junction of Edmonton Trail and 41st Avenue N.E. It’s not fancy – this is very much an independent mom ’n’ pop shop – but the food Clarke is pushing out of the kitchen is turning heads among the city’s many Thai food enthusiasts.
