Voila, the perfect carrot cake topper. Or snack.

These turned out amazing- chewy and sweet with an intense carrot flavor. They were gorgeous on a three layer eight inch round cake. I followed the directions exactly, but did find that I wanted more specific instruction.

I sliced the carrots on the 1/8 inch setting on my mandoline slicer and found that this was about the perfect thickness for a substantial feel in the mouth, but the slices could have been thinner and more delicate and still worked well. I didn't completely boil off the syrup - I drained it after it became fairly thick and used it to color my cream cheese frosting just for fun.
