One of our favorite recipes we published last year.
I dream about this dish. Completely worth the slightly finicky prep . I likely made life a little bit harder on myself by choosing to thinly slice the neck of the squash with a mandolin . Each individual component was easy enough . The panko is key: no big soupy mess here...the panko soaked up the liquid beautifully during the 10 min resting period. 1000% would make again.I’ve made this recipe a few times, and it always turns out great. Comfort food, but healthy-ish.
Like other reviewers have said, it does look watery before the crumbs are added - I left the liquid in and the breadcrumbs soaked it all up by the time baking was finished. It's a little bit time consuming because you're making the sauce and cheese mix, but this would be perfect to batch up on a weekend. A+++!I loved this dish! The cheese and breadcrumbs form a nice crispy layer on top, and the sweet squash goes great with the slightly spicy tomato sauce.
