Brandade, the French salt cod dish, is popping up on menus at Houston restaurants new and old
and Cosmos that were all the rage in the 80s and early aughts are back again. Even flip phones have had a moment of resurgence.In the constant churn of Houston restaurant openings, there’s a dish that’s seemingly popping up everywhere lately: brandade. This recipe—which is often made of salt cod, potatoes and olive oil—is yet another example of how everything old is new again.
At PS-21, Schmit soaks salted cod fish in water overnight before slowly poaching it in milk with thyme, rosemary and bay leaves. Yukon gold potatoes are boiled until they’re soft enough to combine with the fish. The starch and seafood are blitzed to a creamy consistency with the addition of olive oil and touch of cream. It’s served in a skillet and topped off with bread crumbs.
