When she was able to reopen, the government mandated that tables had to be six feet apart. That’s hard to pull off in a 2,500-square-foot space that previously had tables for 100 customers at a time. Capacity had to be cut in half. “The atmosphere was so sobering that I think it prompted him to ask, ‘How’s your business?’ I just looked at him and said, ‘It’s terrible. I’m not sure where we’re going, but I’m certainly not about to give up.’ I could feel that he genuinely cared.”

It’s taking longer to recover in the service industry, she said, because so many exited and aren’t coming back.“This is a career for all of our longtime, dedicated staff members,” she said. “New hires aren’t interested in building a career. It’s a pass-through.”
