Crescent City Connection/HandoutJohn and Nicole Milian opened Crescent City Connection in March 2020. The Cajun and Creole pop-up made the rounds in farmers markets around southeast Houston, selling Louisiana baked goods and sweets. They opened their first brick and mortar in September a year later.
"We have our king cakes, which is the main focus," John said."We do have other items, like the muffuletta and chantilly cake."But the bakery's big draw at the moment is their savory boudin-filled and crawfish-filled king cakes. The latter comes with both, plus crawfish queso on top. "You always associate king cakes with sugary and sweet, but when she made it and I tried it, it was phenomenal," John said."The queso is melted cheese with our own creole seasoning we make in-house. We get our boudin from Royalty Meats over in League City, and we top it off with bacon."
John said they make five to eight a day, but it's hard to keep on the shelves due to the demand. The boudin-only king cake comes is topped with pepper jelly, sharp cheddar cheese and bacon bits and retails at $40. The crawfish and boudin king cake is $50.
